The flagship restaurant of internationally acclaimed Peruvian chef Gaston Acurio is perhaps the world’s best location for upscale, modern Peruvian dishes. Gaston pairs the highest quality and rare ingredients from around the continent (Argentine beef, quinoa, kid goat, conchas negras) with one of Peru’s most sophisticated wine lists, predominantly made up of Chilean and Argentine wines. Try dishes such as the chupe de camarones, duck confit or the risottos, causas, ceviches, and tiraditos. Gaston’s German born wife and pastry chef Astrid is no slouch either. Try her desserts with lucuma or chirimoya, two fruits endemic to Peru.
