Floor-to-ceiling windows look out onto the resort grounds and the majestic red rocks surrounding the property. At lunch, try the Chipotle Chile Caesar Salad with chicken, shrimp or salmon or the Crab and Scallop Cake with strawberry-jicama salsa.
