Very few restaurants in Japan actually restrict themselves to the confines of a particular cuisine, and Maris is no exception. Ostensibly serving Provencal cuisine, it is actually an eclectic blend of the three major southwest European cuisines--Italian, Spanish and Provencal. Naturally, most of the dishes served here are liberally flavored with herbs, garlic and tomatoes.
